" Fresh “ethnic” vegetables (okra, bitter melon, African spinach, etc.) and fresh roots and tubers (yam, cocoyam, orchid tubers, Jerusalem artichokes, etc.) are also increasingly exported to the EU. This is linked both to demand from the African diaspora, and also the growing interest in ethnic foods in Europe. Today, roots and tubers are no longer limited to ethnic shops and restaurants, with large supermarket chains including them in their product range. As with other fresh ethnic vegetables, export volumes of ethnic roots and tubers to the EU from sub-Saharan Africa have doubled in the past 10 years."
