As Extension Leader in the Department of Food, Bioprocessing and Nutrition Sciences at NC State University, my responsibilities cut across all fields of food science at one of the nation’s leading food science universities. I provided leadership as director for the Center for Marine Sciences and Technology (1999-2006) and principal investigator for the NC Sea Grant Seafood Science and Technology Program (1995-2010) with day-to-day management responsibility for the NC State University Seafood Laboratory (1986-present).

Specialties

My seafood laboratory group developed a new molecular method for quantification of histamine-producing bacteria used in mixed culture as an early detection technique for reducing the risk of histamine fish poisoning. More recently, our laboratory is working to validate a heat shock process for in-shell oysters to eliminate risks associated with raw consumption of Gulf state oysters. Industry-related work inlcudes a cold-binding technique for restructuring scallop meats, Scallop Medallions™.

• Led expanded FBNS Extension Group to include four additional faculty and two professional staff with extension and engagement responsibilities bringing the total to sixteen full-time positions within the FBNS department.

• Received FDA cooperative grant to help establish an integrated food safety system through uniform national standards in acidified food products training and certification of federal, state, local, territorial and tribal public health authorities.

• Established Entrepreneur Initiative for Food (ei4f) Program to provide revenue-based laboratory and technical service support for small businesses and entrepreneurs in classification of foods based on risk, evaluation of process control measures and value-added product development.

• Appointed co-Editor with Professor Torger Børessen, Danish Technical University, for the Journal of Aquatic Food Product Technology, Taylor and Francis Group, Oxfordshire, UK.

• Serve as scientific advisor for National Fisheries Institute traceability team, National Seafood HACCP Alliance editors committee and North Carolina Food & Drug Protection Division industry recognition committee for safety.

Responsibilities are for securing operating budget, staff and services in support of faculty, staff and students assigned to work at the marine science facility; fostering integrated programs in marine sciences within NCSU and building strong community partnerships with other state and federal organizations having similar interests in the area of marine sciences.

• Established inter-institutional partnership for access to a high speed, broadband network (1 Gb) with federal (1), state (2) and community (1) partners to deliver internet access, video conferencing and data management.

• Established Marine Science and Education Partnership (MSEP); a ten-member institutional partnership that was shown in 2004 to be directly responsible for over 3, 000 jobs and $127 million dollars to the local economy.

• Acquired property and warehouses for field storage of equipment, research vessels and gear; negotiated long-term lease agreement with Carteret Community College for construction of a CMAST visiting scientists/student housing facility (dormitory).

I lead a seafood safety and processing technology program with emphasis on marine fish and shellfish and aquaculture finfish. My program aims are to identify appropriate control measures for reducing human illnesses due to seafood consumption; to assess and validate novel process controls to eliminate seafood safety risks; and to assist seafood industry with development of further processed, value-added fish and fishery products. I am responsible for technical and administrative supervision of employees assigned to the seafood lab unit, and for development and implementation of the Annual Resource Management Plan with an annual budget based on contracts, grants, cooperative agreements and service receipts.
