In my earlier years being a cook/chef was more about being apprenticed and working several jobs under different chefs and owners in order to gain your experience. Culinary School was not available.
After working several years (1986-1997) in Restaurant and Catering I was offered a starting position by the local 'Budweiser Guys'.
I became a 'BUD MAN'. First being a Route Assistant, achieving my Class A Commercial Drivers License, then moving on to Swing Driver, and finally achieving my own sales route. I was later awarded 'Salesman of the Year' for 1998 in my region. In 2001 I left to pursue using my culinary talents in the humanitarian non-profit world.
2001-2009 Brought a unique and growing experience as I worked & managed the various galleys (kitchens) in Mercy Ships as a volunteer (http://mercyships.org). Traveling extensively and working with over 30 nationalities (at any given time) has expanded my culinary & cultural ‘World View’.
Independantly during the years I have catered, contracted, and consulted for additional income. (And even for FREE!)
In my free time I like to travel and work with charitable & humanitarian organizations in developing countries using my culinary skills.

October 2004 - May 2005 (Interim position to fill in an open spot) Located in West Africa and various public relations stops in Europe. I returned to original job assignment on the M/V Caribbean Mercy upon completion.

The Certified Food Safety Manager examination is accredited by the American National Standards Institute under standards established by the Conference for Food Protection. That accreditation makes National Registry's exam acceptable in all states and jurisdictions that recognize those standards set by ANSI and CFP, and is an assurance of quality in the development and maintenance of the exams.
