Mark Bitterman’s Summary

I am Selmelier of The Meadow, a Portland, Oregon based boutique founded by me and my wife, Jennifer Turner Bitterman, specializing in salt, chocolate, wine, and flowers. I am an expert on artisan made salt, chocolate, and a grab bag of other food-related topics ranging from cassoulet to bitters. The Meadow's clientele includes chefs, hotels, caterers, chef instructors, confectioners, wineries, cruise ships, farmers, resorts, and the many thousands of visitors to our shop. In addition to writing the comprehensive guides and product information for The Meadow, I blog at saltnews.org and chocolatenews.org, and host The Meadow’s events such as salt tastings and dinners. I also presents to food clubs and restaurant staffs, and am a repeat guest lecturer on salt at The Western Culinary Institute – Le Cordon Bleu. Other activities include ongoing co-hosting of The KBOO Radio (90.7 FM) Food Show, presenting at The Northwest Food & Wine Festival, the Molecular Gastronomy Gala at the Oregon Museum of Science & Industry, and other venues. I have been featured on CNN Money, Fox AM Northwest, local radio, leading local and national newspapers and food blogs, as well as other media. A feature story on gourmet salt at The Meadow airing CBS News Sunday Morning is a recent exciting piece of new coverage.

    The Meadow is a shop filled with light and calm and beauty founded by Jennifer Bitterman and Mark Bitterman to provide the elemental pleasures of life. The largest selection of gourmet sea salts anywhere, a wineshop-style array of dark chocolate bars and salted caramels, bitters and aperitifs and champagne and wine. We are also a full service florist specializing in imaginative arrangements.

    The Meadow provides educational and recreational events, including artisan salt tastings, Himalayan salt block cooking classes, salted caramel making classes, chocolate tastings, and wine tastings--sometimes unexpected combinations. We occasionally hosts art openings and seasonal dinner parties.

    We are located in the heart of Portland Oregon's historic Mississippi District, surrounded by many of the city's finest restaurants and cafes, independently owned shops, cutting edge music venues, and more. Our website is www.atthemeadow.com.
