Open one of the pictures in PS. Then select the layer with the picture (make sure it's not locked). Then drag a rounded rectangle over it as big as you want to show the picture inside it. You'll have 2 layers, one with the image, one with the rectangle. Now apple+click or ctrl+click the rounded rectangle so that the outline of it is the moving dotted lines. Go back to your image and click the "add layer mask" at the bottom of the layer palette. Then you'll have your image with the rounded corners. The full image is still there. If you click to unlock the layer between the image icon and the mask icon on the layer palette, you can click the image icon and drag the image around, resize it, etc. within that mask.

You can also create actions in PS where you can open your images and hit play and it will essentially replicate what you just did; automating it. You'll have to search google for instructions.
