Creating Color Visualizer
How would I create a web application that allows the user to click on a color swatch and then updates a portion of an image with the color of the swatch they chose?
The best example I have would be the paint color visualizer (example: http://www.sherwin-williams.com/do_it_yourself/paint_colors/visualizer/index.jsp)
It would not be as complex as this, but the concept is similar. I don't need a detailed 'how-to', I can't find anything about creating this functionality online. Don't even know what technology to use

Since you do not wish a detailed "how to", what are you hoping for exactly?

The example you cited makes use of Flash, which would be one of the easier methods to use, as you simply mark out sections that you want to be able to lay color over, and then use code and a swatch to make it happen.
There may well be a few programs on the net that could do something similar, but which aren't Flash, and my first port of call would be to head over to somewhere like http://www.hotscripts.com as they have a large database of interesting code.
That said - in the long run, Flash may well be the simplest solution here.

Hey, it sounds like Flash might be a good option for you. Check out www.flashden.net - they have a ton of templates which are priced very reasonably. Inparticular you might like this template: http://www.flashden.net/item/choose-your-strongcolorstrong/2354
I also know of a Flash programmer who is a wiz at this type of thing. I have him suggested below.

If you want it to work like the example provided where you drag colors to apply them your best bet is probably Flash.
If you are looking for something more simple (I once worked on a motorcycle website that gave you the choice of three color swatches and when you click or rollover them they change the color of the motorcycle) you can do it with pretty simple Javascript. You need to start with the color swatches and have completed pictures of the objects in the colors you want then it works like a simple image gallery where red swatch = red motorcycle.

Flash does seem like the easiest way to do this, judging from both what you showed and all friendly examples. Don't buy the flash den one, I've uploaded an old version I made you can have it for free and make use of it as you wish.

May not be exactly what you're looking for but check out ColorBrewer -- http://www.personal.psu.edu/cab38/ColorBrewer/ColorBrewer_intro.html. This is used a lot in cartographic map design. Google Colorbrewer and you'll find more similar references.
