I can recommend an article found in Insight Online's group forum.
It talks about the "long tail" of search and the use of KEI. There are two good examples referenced too. It's in the web resources.

Visit WebProNews.com--covers a variety of e-commerce topics including SEO, SEM, Affiliate marketing and ebusiness site design/development.
Orange Soda, a company specializing in SEO may have a course you can take. They also recommend the following blogs:
Searchengineland.com – Only a few years old, but possibly the strongest search news source.
Seobook.com.
Seomoz.org – Trendy, but worthwhile.
Searchenginejournal.com – Oldie, but goodie.
Searchengineguide.com – Oldie, but goodie.
Bruceclay.com/blog – Very up-to-date. Real-time blogging during major search conferences.
A company called TubeMogul http://www.tubemogul.com/ has a great free tool that helps you upload your video to multiple sites which should really help with SEO. Also check YouTube's community help forums.

Using the best keywords and tags when filling our forms as you upload new videos to YouTube is very important. So is using the other tricks of the trade such as approaching bloggers who may be interested in your video and asking them to embed it (be careful not to be too pushy). eMail blasts mentioning your new videos also help.

There are so many courses and resources available you may find it a little intimidating at first.
Start with a Google search with variations of "seo, sem, seo training, free seo courses, etc..." and even consider checking out the SEO for Dummies book to get a basic understanding of what aspects of seo you want to learn about.
Another inexpensive resource shortcut is to do an advanced search on Google filtering your results to look for PDFs, PowerPoint Presentations, and other documents related to SEO, SEM, and other aspects of Search Marketing. You will be amazed as to how much information is out there.

My method: I train myself over and over again by reading books.
For instance Mike Moran's Search Engine Marketing Inc. is a nice one to read. Check this one on Amazon and search for related books via this option in Amazon: (SEO an hour a day, get to the top on google, ...)
These "courses" take a little time (if you are blessed with a good reading pace) and moreover are budget friendly.
