I've used a VA to send mailings and to respond to queries generated by my website. I was extremely pleased with the service. Kristin Ruis was superb as my VA. Her LI profile: http://www.linkedin.com/pub/5/25a/813.

I tried for SEO and for marketing and to check how they work. I was not personally happy.
Explaining them and training them may be one bottleneck.
Hence I did not use them.
However, if you want to try in a limited way, it may work. No harm in trying

I have not used them, but I know people who are using them for billing, invoicing, scheduling, travel, research etc. This is just going to be the new way of life and everyone will get used to it.
A virtual Assistant is a specific case of the generalized Outsourcing issue. In that context, it is my opinion that you only outsource those things to which you or your core company do not contribute or create value add. I've used a VA to source candidates for a series of focus groups, to do basic data entry work and some kinds of appointment setting.

Never use one myself Gina, but here in the UK I know several VAs and their businesses are prospering. As well as things like itinerary planning, phone answering and email prioritisation they also cover jobs such as business plan preparation, report writing and book keeping.
I'm not aware of VAs offering support on internet marketing or SEO. Would you not use an SEO/internet marketing specialist for that?

Get referances. HIre one who a friend or colleague has hired. Below is an article I wrote a few years ago on VAs. I have a page of VA resources including training schools, directories, etc. in the resource queen website, however, to get in you need to sign in (free)
